Every loaf at Marley-Rose Coffee Co begins with Ruan’s care for authentic sourdough: a mature living starter, simple quality ingredients and patient fermentation.

The dough is mixed by hand, allowed to develop slowly, then shaped and proofed before being baked hot for a deep golden crust, light interior and unmistakable fresh sourdough aroma.

For Ruan, exceptional bread cannot be rushed. Each loaf reflects skill, timing and genuine craftsmanship, made with the same pride he would bring to bread for his own family.

How Do You Know If It’s Real Sourdough?

The popularity of sourdough has led many bakeries and supermarkets to label bread as “sourdough” when it has actually been made using commercial yeast. While these loaves may contain a little sourdough starter for flavour, they often don’t undergo the long natural fermentation that gives authentic sourdough its unique qualities.

True sourdough is naturally leavened using a living starter containing wild yeasts and beneficial bacteria. There is no commercial yeast speeding up the process. Instead, the dough slowly ferments over many hours, developing flavour, texture and aroma naturally.

Authentic sourdough is recognised by its crisp caramelised crust, beautifully irregular open crumb, slightly chewy texture and complex flavour that balances gentle acidity with natural sweetness.
